What's the difference between JPG and AVIF?

JPG (also written JPEG) is the workhorse lossy format for photographs. AVIF is the newest mainstream image format, built on top of the AV1 video codec.

Does the quality drop converting between two lossy formats?

Slightly. Each lossy re-encoding discards a small amount of detail. For a single conversion the difference is usually imperceptible at sensible quality settings. Avoid repeated round-trips through lossy formats.

What quality should I pick?

For AVIF, quality 75-85 is the sweet spot — small files with no visible difference from the original. Lower than 60 starts to show artifacts. Higher than 90 mostly just makes the file bigger.
